- Notes: Note: Avery Island is not only the location of the manufacturing plant of Tabasco sauce, but it is also the site of one of the world's largest salt mines. Beginning with the American Indians, salt has been extracted from this mine through various methods. This particular salt mine was very important as a source of salt for the South during the Civil War after the Union blockade of the Mississippi River. This scene of the Avery Island Salt Mine depicts the miners excavating the salt from the dome. It greatly resembles early twentieth century photographs of the same subject by artists such as Theodore "Fonville" Winans.
